Molten Flourless Chocolate Cupcakes

I found that these cupcakes were good fresh and warm, but actually got even better tasting after a day or two...kind of like a German chocolate cake. I put most of them in the freezer and then take them out to thaw one at a time.

24 foil muffin tin liners
1/2 c (1 stick) unsweetened butter
1 c heavy cream
8 oz. quality bittersweet chocolate (70% cacao) (I found a Nestle bittersweet chocolate bar in the candy section of my grocery that I think was about 64% cacao)
4 eggs, room temperature (I just read where eggs at room temp are important to create volume in gluten free items--they said if you're ready to make a recipe and your eggs are cold, just put them in a bowl of warm water for 5 minutes)
1 1/3 c sugar
1/2 c mayo
1/2 tsp salt
1/2 c cornstarch (make sure your cornstarch isn't old and lumpy like mine was-- the small lumps created little "nut-like" creatures in my cupcakes
1/2 tsp cinnamon
powdered sugar for dusting

Preheat oven to 300 degrees F

Spray two 12 cup muffin tins with nonstick spray. Fill tins with foil liners and spray again.

In a small saucepan, heat butter and cream over medium-high heat.

While mixture is heating, coarsely chop 5 oz. of the bittersweet chocolate and place in a heatproof bowl.

When the butter and cream reach a simmer, pour the mixture over chopped chocolate and stir until it is completely melted.

In a large bowl, whisk together eggs, sugar, mayo, salt, cornstarch, and cinnamon until sugar has just dissolved.

Pour chocolate mixture into egg mixture and stir gently until combined. Do not over mix or batter won't rise in oven.

Fill each muffin cup two thirds full (less than 1/4 c of batter.)

Bake until toothpick inserted in center comes out clean, 40 to 45 minutes. (mine were done in 40 min)

Meanwhile, cut remaining 3 oz. of chocolate into 24 equal pieces.

Remove muffin tins from oven and immediately insert a piece of chocolate into center of each cupcake, using a toothpick to gently push it down.

Let cupcakes cool for 10 minutes, then dust with powdered sugar. (I put in sifter and shook sifter lightly over cupcakes.
